Grilled Snapper with Filipino Stir-Fry

- β2 tablespoons Vegetable oilFor grilling
- βto taste SaltFor seasoning
- βto taste PepperFor seasoning
- β2 cups RiceCooked, for serving
- β1 EggplantSliced
- β1 OnionSliced
- β3 cloves GarlicMinced
- β1 TomatoDiced
- β2 tablespoons Patis (fish sauce)For seasoning
- β1 teaspoon Sambal oelekFor spice

Preheat grill to medium-high heat.

Season snapper fillets with salt and pepper.

Grill snapper for 4-5 minutes per side, or until cooked through.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add sliced eggplant and cook until tender, about 3-4 minutes.
