Creamy Irish Vermicelli Pasta
A comforting and creamy pasta dish inspired by Irish cuisine.
Ingredients
- β250g Vermicelli pastaDried
- β60g Unsalted butterSoftened
- β250ml MilkWhole
- β20g All-purpose flourSifted
- β120g Grated cheddar cheeseFreshly shredded
- β10g Fresh parsleyChopped

Bring a large pot of salted water to a boil and cook the vermicelli pasta according to package instructions.

In a medium saucepan, melt the butter over medium heat.

Add the flour and whisk to combine, cooking for 1-2 minutes.

Gradually pour in the milk, whisking continuously to avoid lumps.

Bring the mixture to a simmer and cook for 2-3 minutes, until thickened.

Remove from heat and stir in the grated cheddar cheese until melted and smooth.

Reserve 1 cup of pasta water and then drain the cooked vermicelli.

Add the cooked pasta to the cheese sauce and toss to combine, adding some reserved pasta water if needed.
