Grilled Malaysian-Style Skewers
Delicious and easy-to-make skewers featuring marinated chicken, served with a side of pickled water chestnuts. Perfect for a summer evening.
Ingredients
- β1 lb chicken breastcut into 1-inch pieces
- β1 cup pickled water chestnutssliced
- β1/2 cup malaysian peanut saucestore-bought or homemade
- β2 tbsp coconut oil
- β1 tsp cumin
- β1 tsp coriander
- β1 tsp garlic powder
- β1/4 cup fresh cilantrochopped
- β10-12 skewers

Preheat grill to medium-high heat.

In a large bowl, whisk together coconut oil, cumin, coriander, garlic powder, and 1/4 cup of the peanut sauce. Add the chicken and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Thread the marinated chicken, pickled water chestnuts, and chopped cilantro onto the skewers.

Grill the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through and the vegetables are tender.

Brush the skewers with the remaining peanut sauce during the last minute of grilling.
