Kenyan Ginger Chicken Wrap
A flavorful and spicy wrap filled with grilled chicken, steamed vegetables, and a hint of Kenyan ginger.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 tablespoons Kenyan gingergrated
- β1 cup steamed vegetablessuch as carrots and green beans
- β1/4 cup fresh cilantrochopped
- β1 large wrapwhole wheat or gluten-free
- β2 tablespoons olive oilfor grilling
- βto taste salt
- βto taste pepper

1. Preheat grill to medium-high heat.

2. In a small bowl, mix together Kenyan ginger, salt, and pepper.

3. Rub the mixture all over the chicken breast.

4. Grill the chicken for 5-7 minutes per side, or until cooked through.

5. Meanwhile, steam the vegetables for 3-5 minutes, or until tender.

6. Warm the wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

7. Slice the grilled chicken into thin strips.

8. Assemble the wrap by spreading some of the steamed vegetables on the wrap, followed by the grilled chicken, and finishing with a sprinkle of fresh cilantro.
