Croatian Fried Tomato Stew
A hearty, gluten-free stew made with crispy fried tomatoes and flavorful Croatian spices.
Ingredients
- β2 lbs Tomatoespreferably cherry or grape tomatoes
- β1/4 cup Olive oil
- β2 tbsp Croatian paprika
- β Salt and pepper
- β3 cloves Garlicminced
- β1 cup Gluten-free all-purpose flour

Heat the olive oil in a large skillet over medium-high heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the chopped tomatoes and cook for 5-7 minutes until they start to soften.

Sprinkle the Croatian paprika and salt and pepper to taste over the tomatoes.

Using a slotted spoon, transfer the tomato mixture to a plate.

Dredge the gluten-free flour in a shallow dish.

Dip the tomato slices in the flour, coating both sides evenly.

Fry the tomato slices in the same skillet over medium heat until crispy and golden brown.

Serve the fried tomatoes on top of the stew and enjoy!

Note: If using a deep fryer, set the temperature to 350Β°F (180Β°C).
