Kanom Jeen Nam Ngiaw
A traditional Thai curried noodle soup made with a variety of flavors and textures.
Ingredients

- β2 cups Coconut Milk
- β2 tbsp Funky Red Curry Paste
- β1/4 cup Crunchy Peanuts
- β2 medium Southern Style Sweet Potatoes
- β1/4 cup Jeen (Thai Herbs)

Heat the coconut milk in a large pot over medium heat.

Add the funky red curry paste and stir until fragrant.

Add the crunchy peanuts and southern style sweet potatoes, cook for 5 minutes.

Add the kanom jeen noodles and stir to combine.

Add the jeen (Thai herbs) and stir to combine.

Season with salt and pepper to taste.
