Galangal Stew
A hearty and aromatic stew made with galangal, perfect for a cold winter's night. Serve with naan or rice for a satisfying meal.
Ingredients
- β2 inches galangalpeeled and sliced
- β1 medium onionchopped
- β1-inch piece gingersliced
- β1 tsp garam masalaground
- β1 tsp masala powderground
- β1 can coconut milkfull-fat
- β1 pound stew meat (beef or lamb)cut into 1-inch pieces

Heat oil in a large pan over medium heat.

Add the sliced galangal and cook until fragrant, 2-3 minutes.

Add the chopped onion and cook until softened, 5 minutes.

Add the sliced ginger and cook for 1 minute.

Add the garam masala and masala powder and cook for 1 minute.

Add the stew meat and cook until browned, 5-7 minutes.
