Argentinian Empanadas with Spicy Peanut Sauce
A twist on the classic empanada recipe, filled with a garlicky beef mixture and served with a spicy peanut sauce.
Ingredients
- β1 pound Ground beef80/20 lean to fat ratio
- β3 cloves Garlicminced
- β1 medium Oniondiced
- β1/2 cup Peanutschopped
- β2 Eggsbeaten
- βto taste Salt
- βto taste Black pepper
- β2 cups All-purpose flourfor empanada dough
- β1/4 cup Vegetable oilfor brushing empanadas

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

Add the minced garlic and diced onion to the skillet and cook until the onion is translucent.

Stir in the chopped peanuts and cook for 1-2 minutes.

Add the beaten eggs to the skillet and stir to combine. Cook for 1-2 minutes, until the eggs are set.

Season the beef mixture with salt and black pepper to taste.

Roll out the empanada dough on a floured surface to a thickness of about 1/8 inch.

Use a cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon or two of the beef mixture in the center of each dough circle.

Fold the dough in half over the filling and press the edges together to seal the empanada.

Brush the tops of the empanadas with vegetable oil and bake for 20-25 minutes, until golden brown.

Meanwhile, prepare the spicy peanut sauce by blending together 1/2 cup of peanuts, 1/4 cup of mayonnaise, 1 tablespoon of sriracha, and 1 tablespoon of lime juice.

Serve the empanadas with the spicy peanut sauce for dipping.
