Speck and Argentinian Empanadas
Flaky pastry pockets filled with savory speck and argentinian cheese, perfect as a snack or dessert.
Ingredients
- ●2 cups Dense pastry doughhomemade or store-bought
- ●1/2 cup, diced Speckor bacon
- ●1/2 cup, crumbled Argentinian cheesesuch as queso fresco
- ●1 tablespoon, melted Garlicky buttersee notes
- ●to taste Salt
- ●preheated to 400°F Bakefor 20-25 minutes
Instructions

Preheat the oven to 400°F (200°C).

Roll out the dense pastry dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a small bowl, mix together the speck, argentinian cheese, and garlicky butter.

Place a tablespoon of the speck mixture onto one half of each dough circle.

Fold the other half of the dough circle over the filling, pressing the edges to seal.

Use a fork to crimp the edges and create a decorative border.

Place the empanadas on a baking sheet lined with parchment paper.

Brush the tops with a little water and bake for 20-25 minutes, or until golden brown.
