Filipino-Style Chicken Stew
A hearty and flavorful stew made with tender chicken and a blend of Filipino spices.
Ingredients
- β1 1/2 pounds chicken thighs
- β4 cloves garlicminced
- β1 medium onionchopped
- β2 tablespoons tomato paste
- β2 tablespoons fish sauce
- β2 tablespoons patis (Filipino soy sauce)
- β1 teaspoon black pepper
- β2 bay leaves
- β2 cups chicken broth
- β1 cup ricefor serving

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Remove the chicken and set aside.

Add the garlic, onion, and bay leaves to the pot and cook until the vegetables are softened, about 5 minutes.

Add the tomato paste and cook for 1 minute.

Add the fish sauce, patis, and black pepper to the pot and cook for 1 minute.
