Filipino-Style Lechon with Garlic Butter
A twist on the classic Filipino dish, this recipe adds a rich and savory flavor with a garlicky butter sauce.
Ingredients
- ●1 (2-3 pound) whole pig head or 1 (2-3 pound) pork shoulder Lechon
- ●1/2 cup (1 stick) unsalted butter, softened Garlic Butter
- ●4-5 cloves Garlic
- ●1/4 cup, crumbled (optional) Reblochon Cheesefor garnish

Preheat oven to 325°F (165°C).

Score the skin of the lechon in a crisscross pattern, being careful not to cut too deeply into the meat.

In a small bowl, mix together the softened butter, minced garlic, and a pinch of salt.

Rub the garlic butter all over the lechon, making sure to get some under the skin as well.

If using reblochon cheese, sprinkle it over the top of the lechon.

Place the lechon in a large roasting pan and roast for 2-1/2 to 3 hours, or until the skin is crispy and golden brown.

Let the lechon rest for 10-15 minutes before slicing and serving.
