Uruguayan-Style Stuffed Empanadas with Padron Peppers
A twist on traditional empanadas, filled with flavorful padron peppers and served as a snack or side dish.

- β1 package garlicky empanada doughhomemade or store-bought
- β12-15 peppers padron pepperssliced into thin strips
- β1 cup shredded fluffy cheeseMonterey Jack or similar
- β2-3 peppers uruguayan pepperssliced into thin strips
- βto taste salt
- βto taste black pepper
- β2 tablespoons olive oil

Instructions

Preheat oven to 375Β°F (190Β°C).

Roll out empanada dough and cut into squares.

Place a spoonful of cheese, padron peppers, and uruguayan peppers onto one half of each square.

Fold the other half of the dough over the filling and press edges to seal.
