Smoky Empanadas with Chicken Filling
Classic empanadas filled with a flavorful chicken mixture, perfect for a quick snack or dinner.
Ingredients
- ●1 pound boneless, skinless chicken breast, cut into small pieces Garlicky Chicken FillingCooked until just done
- ● Smoky Empanada Dough
- ●0 Smoky Paprika
- ●0 Salt
- ●0 Parmesan Cheese
Instructions

Preheat oven to 375°F (190°C).

Roll out the empanada dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a large skillet, heat a couple of tablespoons of olive oil over medium-high heat.

Add the chicken to the skillet and cook, breaking it up with a spoon, until it is no longer pink.

Add the smoky paprika and cook for another minute.

Stir in the cheddar and Parmesan cheese until melted and well combined.

Spoon a tablespoon or two of the chicken mixture onto one half of each dough circle.

Fold the dough in half to form a half-moon shape, and press the edges together with a fork to seal.

Brush the tops of the empanadas with a little bit of olive oil.

Bake in the preheated oven for 15-20 minutes, or until golden brown.
