Classic Ukrainian Borscht

Ingredients

- ●3 cloves Garlicminced
- ●1 tsp Garlicminced (optional)
- ●1 cup Borschtcanned or homemade
- ●1/4 cup Frycrushed potato chips (optional)
- ●1/4 cup Vegetable oil
- ●4 cups Water
- ●2 tbsp Vinegar
- ●to taste Salt and pepper

Instructions

Heat oil in a large pot over medium heat.

Add minced garlic and sauté until fragrant.

Add beets, borscht, water, vinegar, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 20 minutes.

Purée soup with an immersion blender or regular blender.

Taste and adjust seasoning.
