Korean Oatmeal Kalguksu
A warm and comforting Korean-inspired oatmeal, infused with the flavors of kalguksu noodles and topped with a gentle sprinkle of earthy sesame seeds.
Ingredients
- β1 cup Rolled Oatsquick-cooking oats work best
- β1/2 cup Kalguksu Noodlesdried kalguksu noodles can be found at Asian markets
- β2 cups Vegetable Brothlow-sodium broth recommended
- β2 tablespoons Sesame Oilfor added depth of flavor
- β1 tablespoon Dark Sesame Seedsfor garnish
- β1 tablespoon Soy Sauceoptional, for added umami
- β1 tablespoon Brown Sugaroptional, for added sweetness
- β1-inch piece Gingergrated or sliced, for added flavor

Bring the vegetable broth to a boil in a medium saucepan.

Add the kalguksu noodles and cook according to package instructions.

In a small bowl, whisk together the sesame oil, soy sauce, and brown sugar (if using).

Once the noodles are cooked, add the sesame oil mixture to the saucepan and stir to combine.
