Roasted Croatian Potato Croquettes

Boil the Croatian potatoes until tender, then drain and mash.

Add the gently roasted garlic, roast beef broth, and a pinch of salt and pepper to the mashed potatoes. Mix well.

Transfer the potato mixture to a bowl and let cool to room temperature.

Once cooled, use your hands to shape the potato mixture into small patties.

If desired, dust the patties with flour, then dip in beaten egg, and finally coat with breadcrumbs.

Place the coated patties on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.

Heat about 1/2 inch (1 cm) of oil in a large skillet over medium-high heat.

When the oil is hot, add a few of the patties to the skillet and fry until golden brown, about 2-3 minutes per side.

Transfer the fried patties to a paper towel-lined plate to drain excess oil.
