Smoked Lamb Tagine Tacos
A Mexican twist on traditional Moroccan flavors, with the rich taste of smoked lamb in a spicy taco.
Ingredients
- β1 pound Smoked lambShredded or thinly sliced
- β2 inches GingerThinly sliced
- β1 medium OnionThinly sliced
- β3 cloves GarlicMinced
- β1 tsp Arabian spicesDried, includes cumin, coriander, cinnamon, and turmeric
- β0.5 tsp Saudian cuminGround
- β2 tbsp Tomato pasteCanned
- β2 tbsp Lime juiceFreshly squeezed
- β8-10 TortillasCorn or flour, your preference
- β2 AvocadoDiced

Heat a large skillet over medium-high heat.

Add the sliced onion and cook until caramelized, about 10 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the sliced ginger and cook for 1 minute, until fragrant.

Add the smoked lamb and cook until browned, about 5 minutes.

Add the Arabian spices, cumin, and tomato paste, and stir to combine.

Add the lime juice and stir to combine.

Reduce heat to low and simmer for 5 minutes.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the lamb mixture onto a tortilla, followed by diced avocado, and any other desired toppings.

Note: If you prefer to use a slow cooker, brown the lamb in a skillet, then transfer it to the slow cooker with the remaining ingredients and cook on low for 3-4 hours.
