Woodfired Rhubarb Tarte with Mediterranean Twist
A sweet and tangy dessert that combines the flavors of the Mediterranean with the sweetness of woodfired rhubarb.
Ingredients
- β2 cups, sliced Rhubarb
- β1 cup Greek yogurt
- β2 tbsp Honey
- β1 1/2 cups Almond flour
- β2 tbsp Olive oil
- β1 tsp Fresh thyme
- β1/4 tsp Salt
- β1/2 cup Woodfired breadcrumbs

Preheat woodfired oven to 400Β°F (200Β°C).

In a bowl, mix together yogurt, honey, thyme, and salt.

In a separate bowl, mix together almond flour and breadcrumbs.

Add sliced rhubarb to the yogurt mixture and toss to coat.

Roll out the almond flour mixture to a thickness of 1/8 inch.

Place the dough in a 9-inch tart pan with a removable bottom.

Arrange the rhubarb mixture on top of the dough, leaving a 1-inch border around the edges.

Drizzle with olive oil and sprinkle with woodfired breadcrumbs.
