Filipino-Style Fried Aubergine with Bihon Noodles

- β2 large auberginesliced into 1/2 inch thick rounds
- β1 cup bihon noodlesdried
- β2 tbsp gingered oilor vegetable oil
- β1/4 cup crispy fried shallotsoptional
- βto taste salt
- βto taste black pepper
- β1 tsp chili flakesoptional

Instructions

Heat 1 tbsp of gingered oil in a pan over medium-high heat.

Add sliced aubergine and cook until golden brown, about 3-4 minutes.

Remove aubergine from pan and set aside.

In the same pan, add another tbsp of gingered oil and cook bihon noodles according to package instructions.

Add crispy fried shallots, salt, black pepper, and chili flakes to the noodles and stir to combine.

Return cooked aubergine to the pan and toss to coat with the noodle mixture.
