Algerian Eggplant Fritters
A delicious Algerian-inspired eggplant fritter recipe. Crispy on the outside, tender on the inside.
Ingredients
- β2 large eggplant
- β2 tbsp algerianchili flakes or berbere spice
- β2 tbsp glazedhoney or maple syrup
- β1 cup flour
- β2 eggs
- β1 minced garlic
- β1/2 cup bread crumbs
- βto taste salt
Instructions

Peel the eggplant and cut it into small cubes.

In a large bowl, mix together the flour, eggs, garlic, and bread crumbs.

Add the eggplant cubes to the bowl and mix well.

Add the algerian spice and glazed honey and mix until the eggplant is evenly coated.

Heat a large non-stick skillet with a small amount of oil over medium heat.

Using a spoon, drop small amounts of the eggplant mixture into the skillet.

Cook the fritters for 3-4 minutes on each side, until they are golden brown and crispy.
