Irish-Italian Salmon Casserole
A hearty, indulgent casserole featuring salmon and Italian-inspired flavors.
Ingredients
- β4 (6 ounces each) Salmon FilletsFresh or frozen, thawed
- β1 pound Glazed Irish SausageCasings removed
- β1 pound (penne or rotini) Pasta
- β2 cups Canned Tomatoes
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β1/4 cup Fresh BasilChopped
- β1 cup Mozzarella CheeseShredded
- β1/2 cup Parmesan CheeseGrated
- β2 tablespoons Olive Oil

Cook pasta according to package instructions.

In a large skillet, heat olive oil over medium-high heat.

Add Irish sausage and cook until browned, breaking up with a spoon as it cooks.
