Brazilian Chicken Stew
A flavorful and hearty stew made with chicken, Brazilian spices, and golden vegetables.
Ingredients
- β1 pound, cut into 1-inch pieces chicken breastBoneless and skinless
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β2 tablespoons tomato paste
- β2 cups chicken broth
- β1 can (14.5 oz) canned diced tomatoes
- β1 pound, sliced Brazilian sausage
- β2 medium, peeled and chopped golden potatoes
- β1/4 cup, chopped glorious cilantro

Heat oil in a large Dutch oven over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken and set aside.

Add sausage and cook until browned, about 5-7 minutes.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add tomato paste and cook for 1 minute.

Add chicken broth, diced tomatoes, and browned chicken.

Bring to a boil, then reduce heat to low and simmer for 20-25 minutes.
