Glorious Malaysian Chicken Satay
A classic Southeast Asian dish featuring marinated chicken, grilled to perfection and served with a side of spicy peanut sauce.
Ingredients
- β1 pound chicken breastcut into skewer-sized pieces
- β1/2 cup coconut milkfull-fat
- β2 tablespoons palm sugaror brown sugar
- β1 tablespoon coriander powderground
- β1 tablespoon cumin powderground
- β2 kaffir lime leavesfresh
- β2 stalks lemongrassfresh
- β1/2 cup peanutspeanut butter can be used as substitute
- β2 tablespoons soy sauce
- β1 tablespoon grated gingerfresh

1. Preheat grill to medium-high heat.

2. In a blender or food processor, combine coconut milk, palm sugar, coriander powder, cumin powder, kaffir lime leaves, lemongrass, and grated ginger. Blend until smooth.

3. In a large bowl, whisk together the blended mixture, soy sauce, and sesame oil. Add the chicken and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

4. Thread the marinated chicken onto skewers.

5. Grill the chicken for 8-10 minutes per side, or until cooked through.

6. Meanwhile, toast the peanuts in a dry pan over medium heat, until fragrant.

7. In a blender or food processor, combine the toasted peanuts, peanut butter, soy sauce, lime juice, and chili flakes. Blend until smooth.
