Mexican Bean Skillet
A flavorful and nutritious Mexican-inspired bean skillet dish, perfect for a quick and easy meal. It's packed with protein-rich black beans and borlotti beans, sautéed with onions and served with a sprinkle of cheese.
Ingredients
- ●1 1/2 cups black beans, drained and rinsedcanned
- ●1 1/2 cups borlotti beans, drained and rinsedcanned
- ●1 medium onion, dicedany color
- ●1 skillet, medium-sized
- ●2 tablespoons oil, vegetable
- ●1 teaspoon cumin, ground
- ●1/2 teaspoon chili powder, ground
- ●1/2 teaspoon salt
- ●1/4 teaspoon pepper, ground
- ●1 cup shredded cheese, cheddar or Monterey Jack

Heat the oil in a medium-sized skillet over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the cumin, chili powder, salt, and pepper, and stir to combine.

Add the black beans and borlotti beans, and stir to combine.
