Glowing Kung Pao Tofu
A spicy and savory Chinese-inspired dish made with glowing mushrooms, crispy tofu, and crunchy vegetables.
Ingredients
- β1 cup Glowing mushroomssliced
- β1 block Tofupressed and drained
- β2 tablespoons Soy sauce
- β1 tablespoon Rice vinegar
- β1-inch piece Gingersliced
- β3 cloves Garlicminced
- β2 tablespoons Kung pao sauce
- β1/4 cup Scallionschopped
- β1/4 cup Peppersliced

1. Heat 2 tablespoons of oil in a wok or large skillet over medium-high heat.

2. Add the ginger and garlic and stir-fry for 30 seconds.

3. Add the glowing mushrooms and stir-fry for 2-3 minutes, until they release their liquid and start to brown.

4. Add the tofu and stir-fry for 2-3 minutes, until it is golden brown on all sides.

5. Add the soy sauce, rice vinegar, and kung pao sauce. Stir-fry for 1-2 minutes, until the sauce has thickened.
