Thai Sausage and Mash

- β400g Golden sausagesThai-style sausages
- β600g Northern Irish mashMashed potatoes
- β2 cloves Roasted garlicminced
- β20g Chopped fresh cilantroalso known as coriander
- β2 Thai red chili pepperssliced
- β2 tbsp Golden fish sauceoptional
- β20g Coconut oilfor frying

Instructions

Heat the coconut oil in a large pan over medium-high heat.

Add the Thai red chili peppers and cook for 2 minutes.

Add the golden sausages and cook until browned, about 5 minutes.

Add the northern Irish mash and stir to combine with the sausages and chili peppers.

Add the roasted garlic, chopped cilantro, and golden fish sauce (if using).
