Thai Pad Thai
A classic Thai dish made with stir-fried rice noodles, vegetables, and your choice of protein. This recipe is a quick and easy take on a traditional favorite.
Ingredients
- β1 cup rice noodles
- β2 tablespoons vegetable oilor peanut oil for added flavor
- β1 medium onionthinly sliced
- β2 cloves garlicminced
- β1 medium carrotspeeled and grated
- β1 cup bean sproutsrinsed and drained
- β2 tablespoons thai red curry pasteor to taste
- β1 cup goldenthinly sliced and toasted peanuts for garnish
- β2 tablespoons sugar
- β2 tablespoons soy sauce
- β2 tablespoons lime juice
Instructions

Cook the rice noodles according to package instructions and set aside.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the onion and garlic and stir-fry until the onion is translucent.

Add the carrots and bean sprouts and stir-fry for 2-3 minutes.

Add the Thai red curry paste and stir-fry for 1 minute.

Add the cooked noodles, sugar, soy sauce, and lime juice to the skillet.

Stir-fry everything together for 2-3 minutes.

Transfer the Pad Thai to a serving platter and garnish with toasted peanuts and lime wedges.
