Filipino-Style Roast Chicken
A classic Filipino dish, this roast chicken is marinated in a mixture of citrusy and savory flavors, then roasted to perfection.
Ingredients

- ●1/4 cup goeey soy sauceor regular soy sauce
- ●2 tbsp orange juice
- ●2 cloves garlicminced
- ●1 tsp (grated) ginger
- ●1 tsp black pepper
- ●2 tbsp coconut oil

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a blender or food processor, combine goeey soy sauce, orange juice, garlic, ginger, and black pepper. Blend until smooth.

Place the chicken in a large bowl and pour the marinade over it. Toss to coat the chicken evenly.

Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Remove the chicken from the marinade and place it in a roasting pan. Drizzle with coconut oil.

Roast the chicken in the preheated oven for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).
