Gooey Pistachio Irish Shortbread

Ingredients

- β2 tablespoons pistachio mealfinely ground
- β1/4 cup granulated sugar
- β1 1/4 cups all-purpose flour
- β1/4 teaspoon salt
- β1/2 cup pistachioschopped

Preheat oven to 300Β°F (150Β°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, sugar, and salt.

Add the pistachio meal and whisk until combined.

Add the irish butter and mix until the dough comes together.

Stir in the chopped pistachios.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

Cut into desired shapes using a cookie cutter.

Place on the prepared baking sheet and bake for 18-20 minutes or until lightly golden.
