Citrus and Spicy Canadian Pancakes
A twist on traditional pancakes with a hint of citrus and a kick of spice. Serve warm with a drizzle of syrup.
Ingredients
- β1 1/2 cups Canadian flour (all-purpose)
- β1 tsp Citrus zest (orange or lemon)
- β4 tbsp Spicy syrup (or maple syrup with a dash of cayenne pepper)
- β2 tbsp Gooey butter (or unsalted butter, melted)
- β2 Large eggs
- β1/4 cup Stir-fry mix-ins (optional, such as diced berries or chopped nuts)
Instructions

In a large bowl, whisk together flour, citrus zest, and a pinch of salt.

In a separate bowl, whisk together melted butter, eggs, and spicy syrup.

Pour wet ingredients into dry ingredients and stir until combined.

Heat a non-stick skillet or griddle over medium heat.

Drop batter by 1/4 cupfuls onto the skillet or griddle.

Cook for 2-3 minutes, until bubbles appear on the surface.

Flip and cook for an additional 1-2 minutes.
