Portuguese Chicken Tagine
A traditional Moroccan-inspired stew with a Portuguese twist, featuring chicken, spices, and a blend of flavors.
Ingredients
- β1 lb boneless, skinless chicken thighs chickencut into 1-inch pieces
- β2 tbsp chopped fresh parsley grass
- β2 tbsp olive oil portugueseuse a good quality oil
- β1 small onion taginechopped
- β2 cloves garlic wingsminced
- β1 tsp ground cumin cumin
- β1 tsp ground coriander coriander
- β1 tsp smoked paprika paprika
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add the onion and cook until browned, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5 minutes.

Add the cumin, coriander, paprika, salt, and pepper. Cook for 1 minute.

Add 1 cup of water and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until the chicken is cooked through.

Stir in parsley and cook for an additional 2 minutes.
