Mentaiko Pilaf with Russian Twist

- β8 oz Mentaiko
- β1 cup Pilaf rice
- β1/4 cup Grassy parsley
- β1 tsp Dried dill weed
- β1 tsp Salt
- β1/2 tsp Black pepper
- β2 tbsp Butter
- β1 tbsp Olive oil

Instructions

Heat butter and olive oil in a large skillet over medium heat.

Add pilaf rice and cook, stirring constantly, for 2-3 minutes.

Add dried dill weed, salt, and black pepper. Stir to combine.

Add mentaiko and stir to combine.

Add 2 cups of water to the skillet. Bring to a boil.

Reduce heat to low, cover, and simmer for 18-20 minutes or until the liquid is absorbed.
