Croatian Stew
A hearty and flavorful stew made with lamb and a blend of spices, perfect for a chilly evening. This dish is a twist on the traditional Croatian version, adapted for a vegetarian diet.
Ingredients
- β1 cup, sliced Lamb (substituted with portobello mushrooms)Use a meat substitute or mushrooms for a vegetarian version

- β3 cloves Garlic
- β1 tsp Croatian paprika
- β2 tbsp Tomato paste
- β2 medium Carrots
- β3 large Potatoes
- β1 cup Red wine (substituted with vegetable broth)Use a vegetarian broth for a meat-free version
- β1 cup Vegetable broth
- βto taste Salt

Heat oil in a large pot over medium-high heat.

Add the sliced mushrooms and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the Croatian paprika and cook for 1 minute.

Add the tomato paste and cook for 1 minute.

Add the carrots and potatoes and cook for 5 minutes.

Add the red wine (or vegetable broth) and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.
