Koji-Glazed Australian Sausage with Fennel
A modern take on traditional Japanese flavors, this dish features a sweet and savory glaze made with koji.
Ingredients
- ●1 pound Australian sausageLook for Japanese-style sausage or substitute with a similar variety
- ●1 bulb FennelThinly slice or chop for better flavor
- ●1 tablespoon KojiYou can also use miso paste as a substitute
- ●1 tablespoon ShioJapanese salt, or substitute with kosher salt
- ●1 teaspoon Fennel seedsOptional, but adds a nice anise flavor

1. Preheat the oven to 400°F (200°C).

2. In a small saucepan, combine koji, shio, and fennel seeds. Cook over low heat, stirring constantly, until the mixture turns golden brown.

3. Add 1 tablespoon of water to the saucepan and bring to a simmer.

4. Meanwhile, cook the Australian sausage in a pan over medium-high heat, until browned on all sides.

5. Transfer the sausage to a baking dish and brush with the koji glaze.

6. Roast in the oven for 15-20 minutes, or until the glaze is caramelized and the sausage is cooked through.
