Italian Pasta Primavera
A colorful and flavorful spring-inspired pasta dish, made with seasonal vegetables and Italian seasonings.
Ingredients
- β1 pound (450g) pastalinguine or fettuccine
- β1 block (200g), drained and cubed tofu
- β2 tablespoons, olive oil harmonious
- β1 cup (120g), mixed spring vegetables (e.g., bell peppers, carrots, broccoli) crisp
- β2 cloves, garlic, minced italian
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1/4 cup, chopped fresh parsley

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.

In a large skillet, heat the olive oil over medium-high heat. Add the cubed tofu and cook until golden brown on all sides.

Add the mixed spring vegetables and garlic to the skillet. Cook until the vegetables are tender, about 3-4 minutes.

Stir in the cooked pasta, salt, and black pepper. Cook for an additional 1-2 minutes.
