Healing Lentil Tagine
A comforting and aromatic North African stew made with healing spices, lentils, and a rich tagine sauce.
Ingredients
- β1 cup red lentils rinsed and drained
- β1 medium onionchopped
- β2 tsp healing spice blendavailable at most health food stores
- β1 tsp gingergrated
- β2 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp tagine spice blendavailable at most Middle Eastern markets
- βto taste salt
- βto taste black pepper
- β2 tbsp olive oil
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the ginger and garlic and cook for an additional 1-2 minutes.

Stir in the cumin, coriander, and tagine spice blend. Cook for 1 minute.

Add the lentils, healing spice blend, salt, and pepper. Stir to combine.

Add 4 cups of water to the saucepan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.

Serve hot, garnished with chopped fresh herbs if desired.
