Hearty Italian Chickpea Stew
A simple yet flavorful Italian-inspired stew made with chickpeas, hearty Irish stew meat, and a touch of aerated chickpea flour.
Ingredients
- β1 pound Irish stew meat
- β1 can (14.5 oz) Chickpeasdrained and rinsed
- β2 tablespoons Aerated chickpea flour
- β1 tablespoon Flour
- β2 cups Water
- β2 tablespoons Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 teaspoon Dried thyme
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat the olive oil in a large pot over medium-high heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the stew meat and cook until browned, about 5 minutes.

Add the chickpeas, water, flour, thyme, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.

Stir in the aerated chickpea flour and continue to simmer for an additional 5 minutes.

Note: If using fresh thyme, use 2 sprigs instead of 1 teaspoon dried.
