Algerian Fenugreek Skillet
A hearty Algerian-inspired skillet dish featuring fenugreek and a variety of spices. Serve with crusty bread for a satisfying meal.

- β3 cloves GarlicMinced
- β1 large Red bell pepperDiced
- β1 can (14.5 oz) ChickpeasDrained and rinsed
- β1 tsp Cumin powderGround
- β1 tsp PaprikaSmoked
- β2 tbsp Tomato pasteHomemade or store-bought
- β2 tbsp Olive oilExtra virgin
- βto taste SaltFlaky
- βto taste Black pepperFreshly ground
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the diced red bell pepper and cook for 2-3 minutes.

Add the chopped fenugreek leaves and cook until wilted, about 3-4 minutes.

Add the cumin powder, paprika, salt, and black pepper. Stir to combine.

Add the chickpeas and cook for 1-2 minutes.

Add the tomato paste and stir to combine. Cook for 1-2 minutes.

Reduce heat to low and simmer for 5-7 minutes.
