Tunisian Beef Stew

Ingredients
- β1.5 lbs Beefcut into 1.5-inch cubes
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β2 tbsp Tomato pastecrushed
- β1 can (15 oz) Chickpeasdrained and rinsed
- β2 cups Beef brothlow sodium
- β2 tsp Tunisian harissaadjust to taste
- β Saltto taste

Instructions

Brown the beef in a large pot over medium-high heat. Remove from pot and set aside.

Add more oil if necessary, then sautΓ© the onions and garlic until softened.

Add the carrots and potatoes, cook for 5 minutes.

Add the beef broth, chickpeas, harissa, salt, and browned beef.
