- β2 tsp Jamaican Stew Blend
- β2 cups (chopped) Tomatoes
- β2 medium (peeled and chopped) Carrots
- β2 medium (peeled and chopped) Potatoes
- β1 medium (chopped) Onions
- β1 medium (chopped) Bell Peppers
- β2 tbsp (bitter melon, finely chopped) Bitter
- β2 cups Water
- β Salt and Pepperto taste

Instructions

Heat oil in a large pot over medium-high heat.

Add onions, bell peppers, and bitter melon. Cook until vegetables are tender.

Add tomatoes, potatoes, carrots, and stew blend. Stir to combine.
