Steamed Spotted Dick
A classic British dessert made with suet and dried fruit, steamed to perfection.
Ingredients
- β250g all-purpose flour
- β100g brown sugar
- β100g dried fruit (currants and raisins)
- β50g suets (beef or vegetable)
- β1 large egg
- β50ml milk
- β25g butter, melted
- β1 tsp vanilla extract
- β1 tsp spotted dick spice mix
- β10g flour for dusting

Preheat a steamer basket over boiling water.

In a large mixing bowl, combine the flour, sugar, dried fruit, suet, and spices.

Add the egg, milk, melted butter, and vanilla extract, and mix until a smooth dough forms.

Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, until the dough is smooth and elastic.

Shape the dough into a log and wrap in parchment paper.

Place the log in the steamer basket and steam for 45-50 minutes, or until the cake is cooked through.

Remove the cake from the steamer and let cool for 10 minutes before serving.
