Kitfo Tibs
Ethiopian-style raw ground beef dish with spices and cheese. A hearty and cheesy twist on traditional kitfo.

- β2 tablespoons niter kibbeh (ethiopian clarified butter)You can make your own niter kibbeh by clarifying the butter with spices and salt.
- β1 small onion chopped onionUse a sweet onion like Vidalia for the best flavor.
- β1/4 cup chopped fresh cilantroCilantro adds a bright, fresh flavor to the dish.
- β1/2 cup grated cheese (such as cheddar or mozzarella)The cheese adds a rich, creamy element to the dish.
- β1 teaspoon ground gingerGrate the ginger on a microplane for the best flavor.
- β1 teaspoon ground cuminUse a high-quality cumin for the best flavor.

In a large bowl, combine the ground beef, niter kibbeh, onion, cilantro, cheese, ginger, cumin, and salt. Mix everything together with your hands or a wooden spoon until just combined.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, use your hands to shape the mixture into small patties.

Serve the kitfo tibs chilled, garnished with additional cilantro if desired.

Serve with injera bread or over couscous for a more substantial meal.
