Pork and Rajas Tacos
A hearty and delicious Mexican dish featuring tender pork and roasted rajas, served in a crispy taco shell.
Ingredients

- β2 rajas (roasted poblano peppers)diced

- β3 cloves garlicminced
- β2 chipotle peppers in adobo saucediced

- β1 teaspoon chili powderground
- β1/2 teaspoon salt
- β1/4 teaspoon pepper
- β8-10 tortillas
- β1 cup crema
- β1 cup shredded cheese

Heat oil in a large skillet over medium-high heat.

Add the pork and cook until browned, about 5 minutes.

Add the onion, garlic, chipotle peppers, cumin, chili powder, salt, and pepper. Cook until the onion is translucent, about 5 minutes.

Add the rajas and cook for an additional 2 minutes.

Reduce heat to medium-low and simmer for 10-15 minutes, or until the pork is tender.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
