Spanish Style Arroz con Kale
A hearty Spanish-inspired rice dish packed with nutritious kale. Perfect for a weeknight dinner.
Ingredients

- β2 cups, chopped kale
- β2 tablespoons hearty spanish olive oil
- βto taste black pepper
- β1 tablespoon negro lard or vegetable oil
- β1 medium, chopped onion
- β2 cloves, minced garlic
- β2 cups chicken broth
- βto taste salt
- β1 medium, diced tomato

Heat the lard or oil in a large saucepan over medium heat.
