Norwegian Pork Stew
A hearty and flavorful stew made with tender pork and a blend of Norwegian spices.
Ingredients
- β1.5 lb pork shoulder, cut into 1-inch cubes
- β1 large onion, chopped
- β3 garlic cloves, minced
- β2 tbsp all-purpose flour
- β2 cups beef brothhomemade or store-bought
- β1 cup red wineoptional
- β2 tbsp apple cider vinegar
- β1 tsp dried thyme
- β salt and pepper

Heat a large Dutch oven over medium-high heat.

Add the pork cubes and cook until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the chopped onion to the pot and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the flour and cook for 1 minute, stirring constantly.

Gradually add the beef broth and red wine (if using), whisking constantly.

Return the pork to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 2-3 hours, or until the pork is tender.

Stir in the apple cider vinegar and dried thyme.

Season with salt and pepper to taste.
