German Green Bean Salad
A hearty salad made with German-style ingredients, perfect for a quick lunch or dinner.
Ingredients
- β1 pound Green beanstrimmed
- β1 medium Red onionthinly sliced
- β2 tablespoons Apple cider vinegar
- β1 tablespoon Olive oil
- β1 teaspoon Dijon mustard
- β Saltto taste
- β Black pepperto taste
- β1/4 cup Chopped fresh parsley

1. Bring a large pot of salted water to a boil

2. Blanch the green beans for 5 minutes, or until tender but still crisp

3. Drain the green beans and immediately plunge them into a bowl of ice water to stop the cooking process

4. In a large bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, salt, and black pepper

5. Add the sliced red onion to the bowl and toss to coat with the dressing

6. Add the cooled green beans to the bowl and toss to combine

7. Sprinkle the chopped parsley over the top of the salad and toss again to combine
