Jamaican Hangover Casserole
A hearty breakfast casserole to cure a morning after, with a Caribbean twist.

- β6 Scrambled eggs
- β8 slices Jamaican sausage
- β1 cup shredded Cheddar cheese
- β8 oz Diced ham
- β1/2 cup Diced onions
- β1/2 cup Diced bell peppers
- β2 tbsp Jamaican seasoning

Preheat oven to 350Β°F (175Β°C).

Cut Cuban bread into 1-inch cubes and toast until lightly browned.

Cook Jamaican sausage in a skillet until browned, breaking into small pieces as it cooks.

Whisk eggs, salt, and pepper in a large bowl.

Add diced ham, onions, bell peppers, and cooked sausage to the bowl and stir until combined.

Stir in toasted bread, Cheddar cheese, and Jamaican seasoning.

Pour egg mixture into a greased 9x13-inch baking dish.
