Spicy Chicken Khao Pad
A twist on the classic Thai stir-fry dish, this Spicy Chicken Khao Pad combines the bold flavors of India with the spicy kick of Thailand.
Ingredients
- β1 lb chicken breastcut into bite-sized pieces
- β2 tbsp khao pad saucehomemade or store-bought
- β1 large onionchopped
- β3 cloves garlicminced
- β1 large bell peppersliced
- β1 large tomatodiced
- β1 tsp Thai red curry pasteadjust to taste
- β2 tbsp vegetable oilfor frying

Heat oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add more oil if necessary, then add the onion, garlic, and bell pepper.

Cook until the vegetables are tender, about 5 minutes.

Add the tomato and cook for an additional 2-3 minutes.

Add the curry paste and cook for 1 minute, stirring constantly.

Add the khao pad sauce and stir to combine.

Return the chicken to the skillet and stir to coat with the sauce.
