Kenyan Lamb Stew
A hearty and flavorful lamb stew inspired by Kenyan cuisine, perfect for a cold evening.
Ingredients
- β1 pound lamb shoulder
- β1 medium onion
- β3 cloves garlic
- β1 large tomato
- β2 cups stew
- β2 medium carrot
- β2 medium potato
- β2 cups herbal teafor serving
- β1 teaspoon salt
- β1/2 teaspoon black pepper

1. Heat oil in a large Dutch oven over medium-high heat.

2. Add the lamb shoulder and cook until browned on all sides, about 5 minutes.

3. Remove the lamb from the pot and set aside.

4. Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

5. Add the tomato, stew, carrot, and potato to the pot.

6. Return the lamb to the pot and bring to a boil.

7. Reduce the heat to low and simmer, covered, until the lamb is tender, about 1 1/2 hours.
