Brazilian Chicken Tagine
A hearty and flavorful dish originating from Brazil, made with chicken and a blend of spices.
Ingredients
- β1 1/2 pounds Chicken breastCut into 1-inch pieces
- β2 tablespoons Homemade tagine spice blendAvailable at most Middle Eastern markets
- β2 tablespoons Olive oilFor cooking
- β1 large OnionsChopped
- β3 cloves GarlicMinced
- β1 large Red bell pepperSeeded and chopped
- β1 can Diced tomatoes14.5 oz
- β1 cup Chicken brothLow sodium
- βto taste SaltFor seasoning
- βto taste Black pepperFor seasoning

Heat oil in a large Dutch oven over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes.

Remove chicken and set aside.

Add onions and garlic to the pot and cook until softened, about 5 minutes.

Add red bell pepper and cook for an additional 2-3 minutes.

Stir in tagine spice blend and cook for 1 minute.

Add diced tomatoes, chicken broth, salt, and black pepper.

Return chicken to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until chicken is cooked through.

Serve hot, garnished with fresh cilantro if desired.
